  • ¼ tsp salt
  • 1 cup Sugar
  • 5 Egg Yolks
  • 5 Egg Whites
  • 1 tsp Baking Powder
  • 1 cup All Purpose Flour
  • 1 ½ tsp Vanilla Bean Paste or Extract
  • ⅓ cup of Evaporated Milk (⅓ cup)
  • 1 cup Maraschino Cherries
  • 1 tsp Vanilla Extract
  • 1 ½ cup Evaporated Milk
  • 1 ½ cup Sweet Condensed Milk
  • ½ cup Heavy Cream or Half & Half

  1. Add ⅓ sugar to eggs and whip until stiff peaks form. Set aside
  2. In a stand mixer or with a hand mixer, beat/whisk egg yolks and sugar. Beat until a pale yellow color
  3. Add vanilla extract and beat for another 1-2 mins
  4. Add ⅓ of All Purpose Flour and mix on low speed
  5. And ½ evaporated milk and mix on low speed
  6. Alternate between dry and wet ingredients until it’s all been added
  7. Scrape bowl and add ½ egg white-sugar mixture
  8. Gently fold in eggs whites until all of the egg whites have been added and folded in
  9. Add cake batter to cake pan that’s been greased and lined with parchment/wax paper
  10. Bake in a preheated oven at 350 degrees for 35mins
  11. Cake is ready when toothpick comes out clean
  12. Once the cake is cooled, use circle cutters that are just a hair smaller than the mason jars that you’ll be using
  13. Cut as many circles as you can setting aside all of the cake scraps. You can still soak those pieces for a delicious cake
  14. Now place cake into mason jars and set aside
  15. In a large mixing bowl, combine evaporated milk, half & half or cream, sweet condensed milk, and vanilla. Mix until well combined
  16. Pour milk mixture over cakes being careful not to overfill
  17. Place mason jars in fridge. Chill for 1 hour or more
  18. Frost with a dollop of your favorite frosting and add a cherry

Tres Leches cake is moist and best enjoy when chilled. Using half and half or cream makes a huge difference. Cake scraps can still be soaked in Tres Leches and taste fantastic!
