Flavorful, easy, and homemade steak fajitas made with flank steak and a homemade fajitas seasoning blend!
Steak fajitas are one of my favorite fajitas recipes to make. I especially making steak fajitas with flank steak since I love the intense beefy flavor that you get from this cut of meat. Much like my Easy Carne Asada recipe, you can make steak fajitas throughout the year.
However, something about making steak fajitas during the spring and summer makes this Mexican inspired dish extra tasty and delicious! This dish is even better when you make the steak fajitas marinade and seasoning right at home!
What Steak Can You Use To Make Steak Fajitas?
You can make steak fajitas with a few different cuts of meat. You can use skirt steak, flap steak, or flank steak. Sirloin steak is also a great option as well for steak fajitas! The trick is to season the steak liberally and thinly slice it against the grain once it’s done.
I personally love the beefy taste of a good steak. This is why I always choose to use flank steak. Flank steak is fibrous and typically one of the cheaper cuts of red meat at the market.
Even though steak prices are through the roof, you can still get pretty good bang-for-buck by opting for flank steak. Costco has an unbeatable price and selection when it comes to flank steak in particular.
What's The Best Way To Cook Flank Steak?
On the surface, flank can seem pretty hard to cook. This cut of meat is lean and fibrous. However, you can easily have a juicy steak dinner if you cook flank quickly over very high heat!
If you love the beefy taste of a good steak, then you’ll absolutely love the flavor that you get by cooking flank steak. Nonetheless, you can also use other cuts of meat that are naturally juicier because they’re more marbled.
Flap steak is another great option when making steak fajitas and even Carne Asada. You can also use skirt steak. However, this cut has had one of the biggest price increases in recent years.
Marinade For Steak Fajitas
Fajitas are smokey, spicy, and subtly sweet! I personally love creating my own fajitas seasoning blend right at home with a few ingredients:
- Chili Powder
- Cumin
- Paprika – you can use regular or smoked paprika for an extra punch
- Cayenne Pepper
- Onion Powder
- Garlic Powder
- Brown Sugar
- Mexican Oregano or Dominican Orégano – both have a citrus undertone that truly set it apart from Italian or Greek orégano
- Kosher Salt
- Freshly Cracked Black Pepper
- Fresh Lime
- Fresh Cilantro
- Olive Oil
You can choose to marinade your steak of choice for the fajitas whether it’s skirt steak, sirloin, flank steak, or flap steak. You can also choose to season everything at the end for maximum flavor payoff! Here’s what I mean…
How To Make Steak Fajitas
You can make flank steak fajitas in a similar way that I make Chicken Fajitas and Shrimp Fajitas. To start, mix together the spices for the homemade fajitas seasoning mix.
You then use roughly 75% of fajitas seasoning to marinade the steak. You’ll also want to add fresh lime or fresh orange juice along with olive oil. You then let the meat marinade for at least an hour or even overnight.
Afterwards, sear the meat on high until it’s cooked to your desired internal temperature. In the end, saute your fajitas veggies (onions, peppers, and garlic) with the rest of the fajitas seasoning and the thinly sliced flank steak.
However, I actually like to take a different approach to making flank steak fajitas. In fact, this method will result in the best steak fajitas and it’s also easier to make.
Since I love the natural beefy flavor of flank steak, I actually like to treat it as I would any other normal steak such as sirloin, ribeye, or even a NY strip. I first begin by making sure that the flank steak is fully dry.
I then season the flank steak liberally with kosher salt and black pepper. Soon after, I sear the flank steak over high heat with olive oil. This will allow for a beautiful crust to develop on both sides. Once the steak reaches medium rare, I remove from the heat and let the steak rest for 10 minutes.
As the flank steak is resting, I then mix together all of the spices for my Mexican inspired fajitas seasoning blend. I also slice all of my fajitas veggies such as onions and colorful bell peppers along with fresh garlic.
I then thinly slice the flank steak against the grain. In the end, I fire my skillet back up to high heat and add more olive oil, fajita veggies, and the fajita seasoning. After about two minutes the spices should begin to toast. This is where I’ll add my juicy flank steak into the mix, toss, and squeeze fresh lime juice.
Treating the flank steak like a proper steak, even making steak fajitas will give you juicy steak with the vibrant, smokey, and subtly sweet flavors of fajitas. The only thing missing is a Spicy Margarita on the side!
