Easy Carne Asada

An easy Carne Asada recipe that’s perfect for summertime grilling!

Summer is here and that means that we’re firing up the grill! The best part about the sunny weather and longer days is grilling outside. It’s hands down one of my favorite things to enjoy during this time of year. This year, grilling is extra special because we’re barbecuing from our new home! We’ve been making this Easy Carne Asada recipe because it’s an easy recipe that’s perfect for summertime grilling!

Moving is so hectic, but that doesn’t mean that the dishes we make need to take a hit. If anything, it’s a great time to explore and experiment. Nonetheless, there are some dishes that are tried and true. This Easy Carne Asada is the absolute perfect dish for the summer – and year round, honestly! It comes together with just a few ingredients and cooks in just 15 minutes depending on how you like your steak cooked. 

In fact, I make this dish so often that I have unbeatable tips and tricks that will help you cook this recipe perfectly! It all comes down to the quality of your ingredients, technique, and of course personal preference! 

Tip #1: Choose a cut of steak that has some marbling and fat. This will allow the meat to grill perfectly and also adds to the flavor of the dish. Flank steak is a great option for this recipe 

Tip #2: Use the freshest ingredients that you can find especially when it comes to the garlic and limes. This will elevate the dish. Nothing compares to fresh garlic and lime 

Tip #3: Use a kitchen thermometer to ensure that you cook the meat to your liking. I personally like the ThermoPen, but any kitchen thermometer will do. I also like my steaks cooked perfectly medium

Tip #4: Once your steak is grilled to your liking, remove it and let it rest for a few minutes. Saute the onions while you slice the meat. Then gently toss the sliced steak in the grilled onions and garlic for added flavor. This extra step is the difference between a good Carne Asada and an AMAZING Carne Asada 

Tip #5: You can make this recipe using a variety of different grills. Since we’re still settling into our new home, we’re using the Ninja Sizzle Indoor Grill and it’s been great. However, the key – no matter what kind of grill you have – is to get the grill nice and hot. You want the meat to sizzle and lock in all of the flavors once you start cooking it 

Tip #6: Last but not least, when you’re grilling the steak, try to leave behind as much garlic as possible. We don’t want to burn the garlic thus turning it bitter. Remember, we’re going to grill the veggies separately at the end allowing for their flavors to shine

Ingredients

  • 2 lbs Flank Steak
  • 1 Lime
  • 3 Garlic Cloves Mashed or Minced
  • ½ tsp Cumin
  • ½ tsp Mexican or Dominican Orégano
  • ½ cup Minced Cilantro
  • 1 Spanish Onions
  • Kosher Salt
  • Black Pepper
  • Olive Oil

Instructions

  1. Thinly slice onions and mash garlic. Set aside 
  2. In a large mixing bowl, add flank steak (whole NOT sliced). Season steak liberally with kosher salt (~ 1 tbsp) and black pepper. Then add orégano, cumin, sliced onions, ½ lime, garlic, and most of the diced cilantro. Make sure to leave a bit for garnishing. Then drizzle roughly 1 tbsp of olive oil. Mix together until well combined. 
  3. Heat a grill to 400F. Once the grill is up to temperature, add flank steak and cook undisturbed for 4 - 5 minutes on each side. Make sure to leave onions and leftover marinade in the mixing bowl. Do not discard. Once the steak is done, remove and let rest on a large plate with deep sides to catch any juices. 
  4. Reduce heat to medium-low and add onions and any leftover marinade to the grill. Add a pinch of kosher salt to help veggies sweat. 
  5. While onions are sauteing, add thinly sliced steak against the grain and add to sauteed onions and garlic. Add any juice that may have collected on the plate. Gently toss steak in cooked veggies and squeeze the other ½ of lime. Feel free to cook steak longer if you desire. Enjoy with your favorite side dish while warm!
